Grilled Tofu, Tomato, & Cheese Sandwich

1 oz Nasoya® TofuBaked, Chipotle, crumbled
2 tsp butter, softened
2 slices whole grain bread
1 oz sliced pepper-jack cheese
1 large tomato, sliced
Salt and pepper
- Spread butter on one side of each slice of bread.
- On unbuttered side of one slice of bread, place cheese slice; place tofu over cheese. Top with tomato.
- Sprinkle with salt and pepper.
- Top with remaining slice of bread, butter side up.
- Heat 8-inch nonstick skillet over medium heat.
- Grill sandwich 4 to 5 minutes, turning halfway through, or until golden brown and cheese is melted.
