½ cup raw cashews
2 lemons
16 oz Nasoya Silken Tofu
¼ cup maple syrup
1 tsp vanilla extract

Optional: candied pecans, crystalized ginger


  1. Add the cashews to a small bowl and add ½ cup hot tap water. Let the nuts soak for at least 10 minutes. Zest and halve the lemons.
  2. Drain the cashews and place the nuts in a food processor. Add half the lemon zest, lemon juice, silken tofu, maple syrup, vanilla extract, and a pinch of salt to the food processor. Blend on high until very smooth.
  3. Divide the lemon parfait between serving bowls and chill for 15 minutes. Top each serving with the remaining lemon zest and toppings of your choice. We recommend candied pecans and crystalized ginger. Enjoy!
