Ingredients

1 pkg Nasoya® TofuBaked, Teriyaki
1/4 cup mayonnaise or vegan mayonnaise
1/4 cup yogurt, plain
1/2 tsp orange juice and zest
2 Granny Smith apples, cored and diced
1 Red Delicious apple, cored and diced
1/4 cup celery, chopped
1/4 cup walnuts, chopped
1/2 cup red/green grapes, cut in half
1 tsp mint, fresh chopped

Preparation

  1. Start by preparing ingredients. Cut tofu in half lengthwise and across. Cube 4 x 4 for a total of 16 pieces per cube.
  2. Combine all the ingredients in a bowl and mix well. Reserve teaspoon of walnuts and fresh mint for garnish.
