Ingredients

1 pkg (8 oz) Nasoya® TofuBaked, Sesame Ginger or Teriyaki flavor, cubed
2 tbsp finely chopped onion
1 medium stalk celery, chopped
1/2 cup dried cranberries
1/4 cup sliced almonds, toasted*
1/2 cup mayonnaise or vegan mayonnaise
1 tsp Dijon or yellow mustard
4 lettuce leaves
4 croissants or sandwich rolls, split

Preparation

  1. In medium bowl, combine tofu, onion, celery, cranberries, almonds, mayonnaise or vegan mayonnaise, and mustard.
  2. Line bottom halves of croissants with lettuce leaves. Divide tofu mixture evenly among croissants. Cover with top halves of croissants.
  3. *To toast almonds, heat oven to 350°F. Spread almonds in single layer on rimmed baking sheet. Bake 5 to 10 minutes, stirring occasionally, until almonds are golden brown.
