1/2 pkg Nasoya® Organic Firm Tofu, or Nasoya® Organic Firm TofuPlus
1/2 tsp kosher salt
1/8 tsp garlic powder
Juice of one lemon
2 tbsp extra virgin olive oil
1 large tomato, preferably heirloom
1 avocado
Kosher salt
Freshly ground pepper


  1. Combine salt, garlic powder, lemon juice, and olive oil in a mixing bowl. Cut the tofu into very small dice. Gently fold the tofu into the dressing and let marinate for 30 minutes or up to one day ahead.
  2. Cut the baguette into about 25 to 30 diagonal slices. Toast the baguette slices. Mash the avocado in a bowl and spread evenly on the baguette slices using a butter knife.
