Ingredients

Nasoya Silken Tofu

Nasoya Extra Firm Tofu (as the croutons)

¼ cup olive oil

¼ cup silken tofu

½ teaspoon finely grated lemon zest

2 tablespoons fresh lemon juice

3 teaspoons Dijon mustard

3 teaspoons drained capers

2 teaspoons nutritional yeast

Salt and Pepper for taste

Lettuce or romaine hearts, and grated toasted almonds (for serving)

Preparation

  1. Purée oil, silken tofu, lemon juice , mustard, capers, and nutritional yeast in a blender until smooth. Season with salt and pepper.
  2. Just before serving, toss dressing with lettuce, croutons, and almonds.
