Vegan Taco Stuffed Delicata Squash Boats

2 delicata squash, sliced in half lengthwise, seeds removed

1 packet of Nasoya Zesty Mexican Style Superfood Skillet

½ mashed avocado

Tahini and sriracha to drizzle on top

Preparation

  1. Preheat the oven to 475
  2. Once preheated, add your squash and bake for 30minutes, skin side down
  3. While cooking, add your superfood skillet to a pan and heat on low for 5 minutes
  4. Once squash is done, remove from oven and stuff with skillet ingredients, top with mashed avocado and drizzle with tahini and sriracha
