Southwestern Tofu Scramble

Ingredients: 
  • 1 pkg Nasoya® Firm tofu, patted dry
  • 1 tbsp canola oil
  • 1 clove garlic, minced
  • 1 small red onion, chopped
  • ½ red pepper, chopped
  • ¾ cup corn
  • ½ cup Monterey Jack cheese, shredded

Seasoning:

  • 1 packet taco seasoning mix OR 1 ½ tsp chili powder, 1 tsp ground cumin, ½ tsp salt
  • Topping: ½ cup salsa, ½ ripe avocado (optional)
Preparation Method: 

Heat oil in a large nonstick pan over medium high heat. Once oil is hot add the garlic and onion and sauté for about 5 minutes. Add the red pepper and sauté for 5 minutes. Stir in the corn and the seasoning. Crumble the tofu into 2 to 3-inch chunks and add to the pan. Heat for about 3 minutes, stirring occasionally to blend in the seasoning. During this time the tofu can be broken into smaller pieces to resemble the consistency of scrambled eggs. Remove from the heat and stir in the cheese until just melted. Top each serving with 1 tbsp salsa and avocado slice. Enjoy!
