Ingredients: 
  • 1 pkg Nasoya® Cubed tofu
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup shredded carrot
  • ½ cup sliced green olives
  • ½ cup golden raisins
  • ½ tablespoon orange peel
  • ½ cup slivered almonds, toasted

Sauce:

  • ¾ cup honey or agave nectar
  • ½ cup orange juice
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cinnamon
Preparation Method: 

Whisk together the sauce ingredients in a medium bowl and set aside. In a large skillet over medium high heat, saute the onion and carrot in the olive oil for 7 - 10 minutes or until tender. Gently stir in the green olives, raisins and tofu. Stir in the sauce, bring to a simmer, cover and cook for 3-5 minutes. Stir in the orange peel. Serve over couscous or rice and garnish with the toasted almonds.
