Shredded Beef Won Ton Cups with Spicy Coleslaw
- 1 pkg Nasoya Won Ton Wraps
- 3 lb roast (beef or pork would work well)
- ¼ cup of ketchup
- 1 can of beer (lager or ale) substitute beef broth if you don't want to use beer
- 1 tsp Worcestershire sauce
- 2 tbsp brown sugar
- 1 tsp paprika
- 1 tsp cumin
- ¼ tsp cayenne pepper (can be omitted)
- Salt and pepper
Won Ton Cups: Spray a mini muffin tin with non-stick cooking spray. Insert a wrap into each individual slot. Brush or spray edges with non-stick cooking spray, butter, or egg whites. Cook for about 2 mintues or until slightly golden at 400° F. Set aside.
Filling: Combine all of the spices. Salt and pepper the roast, then rub with spice mixture. In a Dutch oven, whisk together the beer/broth, ketchup and Worcestershire sauce. Simmer the roast until it can be pulled apart with a fork. While the roast is cooking make the coleslaw. I used a bagged mix, a little mayo, juice from half a lime and a couple dashes of hot sauce. When the beef is done, shred it with a fork into bite sized pieces, pile it into a won ton cup and drop a small spoonful of coleslaw on top.
