Tofu Spinach Patties

  • 2 x 14-oz Nasoya extra firm tofu
  • 2 Cups raw spinach
  • 1/2 Cup nutritional yeast
  • 1/4 Cup tahini
  • 3 Tablespoons Nayonaise
  • 2 cloves garlic
  • Salt & pepper to taste
  • Cooking oil for frying
Preparation Method: 

In your food processor add your tofu and spinach and process until smooth.  Add in the nutritional yeast, tahini, mayo, garlic, and process until fully incorporated.  Add salt & pepper to taste and adjust seasoning as necessary.

Add 1-2 Tablespoons of cooking oil to your skillet (I used my cast iron as it gives a great crust!) and heat on medium-high heat.  Using 1/3 Cup per patty, form 1/2 inch thick and 4 inches wide and saute on each side until golden, about 5-7 minutes.
