Ingredients: 
  • 1 pkg Nasoya Silken Tofu
  • 2 cup fresh or canned tomatoes, chopped
  • ½ cup celery, chopped
  • ¼ cup onions, chopped
  • 1 tsp basil
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 tbls oil
  • 1 bay leaf
Preparation Method: 

In a pot mix together tomatoes, celery, onion, bay leaf, basil, salt and pepper. Cover and simmer for about 15 minutes. Blend in tofu and oil. Serve hot or cold. Garnish with croutons if desired
