Sizzlin’ Sicilian Tofu Fajitas with Shiraz Salsa

2 pkgs Nasoya® Extra-firm tofu

1 cup feta cheese

Salsa:
1 cup chopped tomato

½ cup chopped black olives

¼ cup chopped cucumber

¼ cup chopped fresh basil

2 tablespoons olive oil

1 tablespoon chopped fresh oregano

1 tablespoon shiraz

1 clove garlic, minced

Spices:
2 teaspoons black pepper

2 teaspoons salt

1 teaspoon garlic powder

1 teaspoon red pepper flakes

1 teaspoon chopped fresh basil

1/2 teaspoon cayenne pepper

4 fajita-size tortillas

Preheat oven to 350° degrees. Stir together the salsa ingredients in a medium bowl; cover and refrigerate. Wrap tortillas in foil and place in oven for 8 minutes. In a shallow bowl, mix together the fajita spices. Slice the tofu lengthwise into 6 rectangles. Cut each rectangle into 4 long strips. Dredge the tofu strips in the spice mixture and grill over medium-high heat for 3 – 5 minutes per side (top and bottom) or until golden brown. (Alternatively, place the tofu under a broiler on a lightly-oiled baking sheet and cook for the same amount of time.) To serve, place tofu strips in warmed tortilla wraps, top with shiraz salsa and sprinkle with feta cheese.
