Thai Tofu Pizza

½ pkg Nasoya® Extra Firm tofu, patted dry
1 12-inch pre-baked pizza crust
½ cup Thai peanut sauce, store bought
1 cup grated mozzarella cheese
½ cup chopped broccoli
2 scallions, thinly sliced
2 tsp canola oil
Garnish: (optional)
2 tbsp chopped mango
2 tbsp chopped peanuts
1 tbsp chopped cilantro
Preheat oven according to pizza crust directions. In a medium bowl, crumble the tofu and mix in 3 tbsp of the Thai peanut sauce. Heat oil in a large nonstick pan over medium high heat and sauté the tofu until browned, about 5 – 7 minutes. Spread remaining sauce over pizza crust and top with sautéed tofu, cheese, broccoli and scallions. Bake according to pizza crust directions or until cheese is melted. Serve while hot garnished with mango, peanuts and cilantro, if desired. Enjoy!
