Sesame Ginger Sofrito Burrito

1 pkg Nasoya® TofuBaked, Sesame Ginger, diced into cubes
1/2 cup brown rice, cooked
1 tbsp olive oil
1/4 cup onion, medium mince
1/2 cup red bell pepper, chopped
1 tsp paprika
1 tbsp chili powder
1/4 tsp cayenne pepper
1 can (15 oz) black beans, drained and rinsed
1/2 tbsp salt, kosher
1 can (15 oz) tomatoes, diced with juice
1/2 cup frozen corn
1 tbsp scallions, chopped
8 oz avocado, skinned and diced
- Prepare and measure the ingredients according to the ingredient list.
- Preheat a skillet on medium to high heat. Add the oil and heat to just under the smoke point. Add the onions and red pepper cook until translucent. Add TofuBaked, stirring constantly. Cook the mixture until the vegetables are tender and aromatic. Add the cooked rice, seasonings, and remaining ingredients thru scallions, mixing well. Once heated through, remove from heat and set aside.
- Heat the tortilla in a skillet until it is warm and flexible. Place 5 oz filling and 1 oz diced avocado in the center of the tortilla wrap.
- Fold the wrap from the left and the right to the center of the filling and then roll it up into a burrito. Slice in half on the bias and serve with sofrito sauce for dipping.
