Ingredients

  • ½ package Nasoya Silken Tofu
  • 1/2 cup (heaping) rolled oats
  • 2/3 cup unsweetened milk of choice
  • 1 tablespoon chia seeds or ground flax meal
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 0–2 tablespoons maple syrup
  • 1/2 cup plain pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • Crushed vegan graham crackers

Preparation

  1. Place Silken Tofu, milk, vanilla, salt, maple syrup, pumpkin puree, and seasonings in a blender. Blend until smooth.
  2. Place blended mixture into a sealable jar or container. Add rolled oats and chia seeds. Shake or stir to combine.
  3. Place in refrigerator for at least 4 hours, ideally overnight.
  4. Top with a drizzle of maple syrup & crushed graham crackers. Enjoy!
