Dumpling Soup

Ingredients

  • 1 package Nasoya dumplings (any flavor!)
  • 1 tbsp sesame oil
  • 2 tbsp ginger, minced
  • 4 garlic cloves, minced
  • 6 cups vegetable stock
  • 3 tbsp soy sauce
  • 2 large carrots, julienned
  • 1/2 tsp sea salt
  • 2 cups fresh spinach, packed
  • 1/2 bunch green onions, thinly sliced
  • 1 tsp black sesame seeds

Preparation

  1. Sauté garlic and ginger in sesame oil until fragrant.
  2. Slowly add vegetable stock and soy sauce. Cook until simmering.
  3. Gently add carrots and bring back to a simmer.
  4. Add spinach and cook until just wilted.
  5. Gently add dumplings and let the soup boil for a few minutes until dumplings are warmed.
  6. Garnish with green onions and sesame seeds. Enjoy!
