Spicy Kimchi Hummus on Crackers

Ingredients

  • 1 15oz canned chickpeas – rinsed and drained 
  • ¾ cup Nasoya Kimchi 
  • 2 tbsp tahini paste 
  • 2-3 tbsp juice from the jar of kimchi 
  • 1 tbsp sriracha  
  • 1 teaspoon of red pepper flakes 

Toppings:  

  • whole kimchi 
  • cubes of vegan cheese 
  • various colors of sliced cherry tomatoes 
  • sliced radish 
  • sliced watermelon radish 
  • bacon bits 
  • Asian pear slices 
  • Chives 
  • white sesame seeds 
  • black sesame seeds 
  • Ritz crackers 

Preparation

  1. Drain the kimchi to measure it and keep the kimchi juice aside.
  2. In a food processor, add the chickpeas, kimchi, tahini and sriracha sauce. Then, add 2 tablespoons of the kimchi juice.
  3. Process until smooth and creamy. You may need to take a break or two to scrape the walls.
  4. Then, taste and adjust consistency with more kimchi juice as needed and see if it needs a little salt or not (depending on the kimchi you used).
  5. Smear on ritz crackers and top with your desired toppings!
