Stovetop Tofu Teriyaki Bowls

Ingredients

  • 1 cup dry jasmine rice
  • 1 package Nasoya’s Super Firm Tofu
  • 2-3 cups frozen vegetable blend
  • 1/4 cup teriyaki sauce, plus more for serving
  • Toasted sesame seeds, for topping

Preparation

  1. Add the rice and 2 cups of water to a saucepan and bring to a boil over high heat. Cover, reduce the heat to low, and let cook for 15 minutes.
  2. In the meantime, add 1/4 cup of water to a large sauté pan and add the frozen vegetables. Cook over medium heat for 3 to 5 minutes, until most of the liquid has evaporated and the vegetables have thawed. Transfer to a bowl and set aside.
  3. Add the tofu, teriyaki sauce, and an additional 1/4 cup of water to the same pan; bring to a simmer over medium-high heat, then reduce the heat to medium. Cook for 5 minutes, stirring occasionally, until the tofu is evenly coated in sauce.
  4. Return the vegetables to the pan and stir into the remaining sauce. Divide the cooked rice into serving bowls, then top with vegetables and tofu. Garnish with an extra drizzle of sauce and toasted sesame seeds, or as desired.
