Vegan Sugar Cookies

Ingredients

1 ¼ cup whole wheat pastry flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup organic sugar
½ cup raw cashew butter
¼ cup lite firm silken tofu
2 tablespoons soy milk
2 teaspoons vanilla

Icing:
1 cup powdered sugar
1 tablespoon soy milk
½ teaspoon vanilla extract
Butterfly pea powder
Matcha powder
Freeze-dried strawberries, blended into powder

Preparation

  1. Stir together the dry ingredients in a small bowl.
  2. Mix together the cashew butter, sugar, tofu, and vanilla with a hand mixer.
  3. Then stir the dry ingredients into the wet ingredients. The dough will be pretty stiff, but the flour will eventually mix in.
  4. Chill the dough for at least a couple of hours. Then roll the dough and cut into your desired shapes with cookie cutters and and place on a cookie sheet lined with parchment paper.
  5. For the easiest decorating, simply sprinkle some vegan colored sugar on top of the cookies before baking.
  6. Bake the cookies at 350° F for 7 to 8 minutes. Allow the cookies to cool for a few minutes before transferring to a cooling rack.
  7. If you want to show off your creative side, mix up some simple icing. Stir together the powdered sugar, soy milk, and vanilla. Adjust the consistency of the icing by adding more soy milk or powdered sugar. The icing can be tinted any color you want with Wilton Gel-Based Food Colors.
